Caputo pizzeria 00 flour is a soft wheat flour with strong gluten quality - great for making pizza doughs that require a long fermentation. This ‘00’ flour helps dough to get a great hydration and good elasticity - use it to make traditional Neapolitan pizzas with a light, bubbly crust.

So, who makes this stuff?

Mulino Caputo was established back in 1924 in a small mill in Capua, close to Naples. It's now run by the third generation of the same family & their flours are natural products, with no artificial enzymes or additives.
