First up, let’s deal with the fresh versus dried pasta debate…. It’s not that one is better than the other (it comes down to personal taste after all), it just depends on the dish you’re making! Italians do have a few ‘rules’ when it comes to matching pasta and the right sauce.
Portion size: Allow 80 to 100g of uncooked dried pasta per person. For fresh pasta 125g is a good sized portion for each person.
